National Artichoke Hearts Day – March 16, 2020
The artichoke is a healthy and versatile addition to many recipes and since March 16 is National Artichoke Hearts Day we shall celebrate it.
It is rich in vitamin C, folate, magnesium, fiber and calcium. It is fat free and cholesterol free too and contain loads of fiber, calcium and protein.
The flower head contains more antioxidants than any other vegetable. California grows 100% of America’s domestic artichokes and is known as the artichoke capital of the world.
I always keep a jar of artichoke hearts stored in oil and vinegar in the pantry. Artichokes are healthy and versatile additions to recipes.
There are lots of recipes that use artichokes. Include them in chicken casserole, in a spinach dip or in lasagna. Try putting artichoke leaves on a pizza or in a salad. You can also toss some hearts into a skillet with some spices.
So, at your next get-together, be sure to enjoy the healthy and versatile artichoke. Of course, be sure to include a tub of Phenomenal Fudge for dessert!
