It’s hard to believe we northerners are almost through the coldest month of the year. As exciting
as this is, we would like to celebrate: if one can make it through January, one can make it
through anything! As National Blueberry Pancake Day is upon us, today, this delicious, plump
fruit could remind us of many different things. It could remind of us how eager we are to dive
into the blueberry fields this summer, or it could remind us to continue to be creative with our
cooking as we still have at least eight more weeks of winter (assuming the Groundhog doesn’t
see his shadow...which we all know he won’t, unfortunately). Now, let’s switch gears to Betty
Crocker and see what she has in store for us.
There is nothing like waking up on a cold, snowy, winter day to the smell of blueberry pancakes
on the skillet. Be cautious though, when adding blueberries to the mixture, don’t do so until the
very end, when the mix is already atop the skillet, to avoid creating a bluish color in the mix.
As the smell of blueberry pancakes wafts through the air throughout the remainder of the day,
