Spring-time is maple sap harvesting time in Vermont, usually in March when the snow is still on the ground. It’s an involved process that takes 40 gallons of maple sap to make one gallon of maple syrup. Native American Indians such as the Micmac used V-shaped cuts into the bark of the maple trees to collect the sap, drip by drip. Once the sap was placed into containers hot stones were added to aid in the boiling process to produce the concentrated maple syrup. 

Modern methods use tubing to bring the sap to heated containers called "evaporators" that do all the work.
