Pistachio Walnut Fudge with Home-Roasted Walnuts

We use lots of crispy California walnuts in our Pistachio Walnut Fudge to give a noticeable crunch with every bite. We use a pistachio extract to produce the unique pistachio flavor and scent. It blends beautifully with our vanilla fudge. Remember, there is FREE SHIPPING on all orders over $55. 

We’re sorry, but we do not use pistachio nuts as they are too hard to crack and too costly to buy already shelled. However, that didn't prevent pistacio lovers from honoring them as a delecacy for over 10,000 years. The central asian and middle eastern countries, specifically Persia (now known as Iran) reserved the nuts for royalty. In China it was known as the "Happy Nut" which is depicted as a "smile" when the ripe nut is ready to be cracked. 

Americans started growing them in the late 1800s. At one time the natural light green color was dyed red to prevent the green from rubbing off on the hands of the harvesters. Nowadays all the harvest is done by machine.
