California is the only American state that commercially grows walnuts. As soon as they arrive to us in Vermont we freeze them to keep them fresh and crispy.  But before we do that we roast them at 350-degrees for 9 minutes or so. The roasting gives them a stronger, more flavorfull taste. It is definitely noticable and it makes our fudge with nuts even more phenomenal. 

Walnuts themselves have been around for at least 7000 years. The Romans grew them as did the Persians (present day Iran). Native Americans worked with the very hard black walnuts. In 1867 Joseph Sexton tried his hand at clutivating English walnuts in southern California and began a new industry for his home state. Today 99% of America's English walnuts are grown in California producing half of the world's supply. Interestingly enough the Enlgish walnuts were origianlly known as Persian walnuts. Small world.
