The history of producing maple is centered in New England, USA. The maple flavor comes from maple sap produced by the maple tree. The first record of maple syrup production comes from a report written by the French monk André Thevet in 1557.  He wrote about the Native American who taught the European settlers the various steps used to extract the sap to make the syrup. 

About 40 gallons of sap are required to make just one gallon of syrup which has become a major export from both of our small state of Vermont and Quebec, Canada.
