Okay. This might be the ultimate in chocolate fudge taste testing. The addition of salt makes for an interesting opposite reaction to the sweet dark chocolate and the very sweet caramel.

We use sea salt rather than regular table salt because the grains are more coarse and easier to work with. Both taste salty and the difference, as far as taste is concerned, depends upon your particular palate. 

Sea salt is derived from sea water whereas table salt is mined from land sources. Sea salt is less refined than table salt and may taste slightly different depending upon where it originates, but in the end, salt is salt, right?

The caramel is made in America. It melts easily, mixes easily and frankly is the best tasting caramel we have found in over 35 years of our fudge making business.
