The cream cheese replaces the salted butter we usually use but it takes longer to melt and mix with the vanilla fudge. Cream cheese was invented by a dairyman by accident. William Lawrence added too much cream in his attempt to produce a different style of cheese. He actually like his mistake better. 

Although Lawrence's farm was in New Yorkl the cheese was named "Philadelphia" to give it a more high class name. Cream cheese is not aged like regular hard cheese and soon found a place in every bagle bakery. It also is a wonderful addtion to our lineup too!
