German Chocolate Cake is this month's Flavor-of-the-Month. It's a 50/50 blend of vanilla coconut and chocolate pecan.  The pecans are home-roasted by us in our own kitchen. The roasting gives them a noticeable extra nutty flavor that you don't find in a raw nut. The coconut is shredded and sweetened - easy to bite through and taste.  There is no actual bakery cake in the fudge.

The name stems from a man named Samuel German who worked for Baker's Chocolate Company. He invented a sweeter form of dark chocolate for his employer. The name, Baker's German's Sweet Chocolate, was patented in 1852 but the company shortened it to German...not German's in 1957. Contrary to popular belief, the flavor has nothing to do with Germany, the country - but Samuel German, it's creator.
